you want the proper one for the engine, not having a MAF will cause the car to run lean and fall on its face anytime you touch the gas

My fc was doing the same thing when I first started it, and it was the fuel lines the return line was clogged, then I unclogged it, and the fuel pump didnt give me the enough pressure, so I bought a new one and the problem ended

Maf is hooked up now and it ran all the way up redline, would a rip in the intake elbow coupling make a idle high?

Negative. If it is after the MAF it could mess with fueling.

What kind of throttle body is on it? Stock or aftermarket?. Has someone adjusted the closed throttle stop screw? Possibly to the point that the IAC is being bypassed? I have had issues with an aftermarket 58mm t-body bypassing the LT1's idle air circuit inside the intake manifold and causing an erratic idle. Also, make sure there are no vacuum leaks (even between the MAF and T-body).
