As you may have noticed, I'm somewhat obsessed by minimizing the weight of my FC. A year or two ago, I was determined to replace the heavy sunroof with some kind of lightweight plug. I couldn't find what i wanted. Everything on the market seemed to be designed mainly for looks, replacing the exterior surface with a carbon panel backed by the OEM steel framework and bolted to the heavy tracks and motor.
So I partnered up with a componsites guy, and we made a mold. After a little development work, we had a great looking carbon fiber panel that weighed 2.3 lbs (the oem sunroom assembly weighs 27.8 lbs).
Based on a number of responses, FC folks are interested in buying these panels. So we dusted off the mold, tweaked it until we were happy with it, and we're now selling them.
These are plugs, not sunroofs. This involves removing the entire sunroof and motor system. This may or may not work with the OEM headliner. If you're smart enough to remove your own sunroof and install one of these panels, you can probably find a way to fit it under the headliner... if that's important to you. It wasn't to me, so I can't offer any advice.
The panels use existing 10mm holes on both sides. For security, I also drilled one hole in the interior OEM roof flange on the front edge and secured that to a lip on the sunroof. I'm not so sure that's necessary, but better safe than sorry.
Once bolted in, a bead of RTV or similar sealer can be run around the edge of the panel. This provides a weathertight seal, and also dramatically stiffens the entire structure. Assuming you know how to remove your sunroof, installation of the panel can be done in less than an hour.
Weight of the carbon fiber panel is ~2.3 lbs. Cost is $239, shipping runs around $18.

These are made right here in the US of A. They ship from our shop in SC.
