Is the tail housing of the T5 hitting the floor as it goes in?  You may need to jack the car up some.  Also make sure you have the distributor off when you put it in.

What bell are you using?
A tilted t5's hydraulic slave bracket looks like it would be to wide to fit between the k frame rear mounts.
I just checked both a 11-12  and 10.5 straight up housing and both clear with a lot of room to spare.

I'll post picts when I get to my other computer

I took the trans off the bellhousing and it fits better
now it just looks like the oil pan is hitting in front and back

Shouldn't be hitting in the back, but the front of the pan usually needs to be clearanced or notched to clear the steering rack, and sometimes the mount itself.

Does it matter if I got the convertible I was reading somewhere that it does
And that I should remove the cross member and weld a new one in

Check out bikedad's build thread.  He's been there, done that, and beyond.  Use the front holes in the cradle, clearance the pan.
You can make a barn door fly with enough horsepower.

Are you using the old style straight up bellhousing or the f body tilted bellhousing?  I have the Granny's oil pan and still had to shim up the motor mounts with a few washers to keep it off the mount.  I wouldn't be surprised if they shipped you the wrong transmission cross member, Grant has shipped me a few wrong parts, but he always made it right, just took extra time.

I had to clearance the front of the oil pan to sit over the sway bar.
